Pistachio Cake

This cake may be prepared as a two-layer cake, or a 13×9 pan.  My fave for this cake is a tube pan.

Cake Ingredients

  • 1 package white or yellow cake mix
  • 1 package (4-serving size) pistachio instant pudding mix
  • 3 eggs
  • 1 cup club soda or water
  • 1/2 cup oil
  • 1/2 cup chopped nuts

Frosting

  • 1 1/2 cup cold milk
  • 1 envelope Dream Whip
  • 1 package (4-serving size) pistachio instant pudding mix

Cake

Combine all ingredients in a large mixer bowl.  Blend, then beat at medium speed for two minutes.  Pour into greased and floured pan (9×13, two layers, or tube).  Bake for 30-35 minutes (for 13×9 pan, adjust as needed for other pans) at 350 degrees.  Cool and frost.

Frosting

Pour the milk into a deep bowl.  Add the Dream Whip and pistachio pudding mix.  Beat slowly to blend.  Gradually increase speed until mixture forms peaks.  Spread on cake.

Garnish with chopped pistachios, if desired.
