I lost this recipe for several years when I moved, and tried several other recipes in the interim. This really IS the best banana bread.
I use an eight-cup aluminum pan, about 9 1/4 by 5 1/2, three inches tall (see photo). Add 1/4 chopped walnuts or sliced almonds to the egg-banana mixture, if desired.
- 1/2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 3-4 bananas, crushed
- 1/2 tsp vanilla
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
Cream together butter and sugar
Mix together eggs, crushed bananas, and vanilla.
Combine with butter-sugar mixture.
Sift together flour, soda, and salt. Add to creamed mixture.
Pour into prepared loaf pan.
Bake for 60 minutes.
Keeps well, refrigerated.
